The Pasta Premier League is a contest celebrating the most important ingredients of Italian Cuisine and the talent of Chefs of Italian Cuisine, working outside Italy. Each participant is required to cook and submit a dish of pasta (durum wheat dry pasta) according to either a traditional /historic recipe of Italian Cuisine or an original one.

The Risotto World Contest is an exciting celebration of a dish that, with its countless variations, is a universal messenger of Italian culinary traditions and lifestyle. The contest aims at reaffirming the history of this dish, its indisputable Italian roots, the reasons for its success around the world.


SELECTED SCHOOLS IN DUBAI 10 a.m.
   

This project targets children and families and involve some of the schools of Dubai and their students, with the aim of improving their knowledge of healthy nutrition. The students will engaged in a competition and some Dubai based Italian Chefs, ambassadors of the Italian cuisine and the healthy nutrition, will hold classes and culinary demonstrations in the involved schools.

The mission of the Academy to promote bottarga, dried mullet roe, one of the most typical Italian ingredients at the international level and its culinary applications. The mission will be accomplished with the organization of workshops, tastings, culinary competitions and recipe development. The aim is to create a network of food and beverage professionals (chefs, restaurateurs, sommeliers, etc.) who are the ambassadors of Bottarga around the world. To become member of the network applicants must participate in one of the qualifying workshops organised by the Accademia della Bottarga. Each member is awarded a certificate and a jacket pin, is entitled to participate to the activities of the Accademia and receives Accademia’s periodical newsletter.

In this unique competition only chefs will prepare one of the most unique expressions of Italian gastronomic culture. Gelato has less fat than ice cream. While the latter is normally heavy on the cream and has a fat content of at least 10 percent, gelato uses more milk than cream, and generally also uses less egg yolks -- if any. Ice creams are churned faster and harder than gelato. The chef’s gelato finally is in general a culinary creation, since it’s served in their restaurants, with a higher level of complexity and subsequently flavour.
